A Year of Breakthroughs in 3D Food Printing

As of October 2024, the 3D food printing industry has seen unprecedented advancements, especially in industrial-scale production and personalized nutrition. Key players like Revo Foods, Steakholder Foods, and SavorEat have launched technologies that promise not only to scale food production sustainably but also to introduce the concept of “mass customization,” where food products are tailored to the individual needs of consumers. These innovations are not only revolutionizing how food is made but also redefining what food can be in terms of nutrition, taste, and ethical impact.

Rise of the ‘Taste Factory’ &Food Fabricator X2

A standout facility leading the charge is Revo Foods’ newly opened ‘Taste Factory’ in Austria, the largest 3D food-printing facility in the world. This facility, inaugurated in early October 2024, sets a global standard for industrial-scale food production using 3D printing. Equipped with the Food Fabricator X2, Revo Foods’ factory is designed for high-throughput production, with a capacity to produce up to 60 tons of plant-based food per month. The Food Fabricator X2 is a state-of-the-art machine that uses a multi-nozzle extrusion system to deliver a continuous output of structured, nutrient-rich foods. The system is capable of creating various textures and shapes, making it adaptable to a wide range of food types.

One of the flagship products of Revo Foods is ‘The Filet,’ a 3D-printed fish alternative that mimics the delicate texture of salmon. The Taste Factory’s approach emphasizes minimal processing and nutrient preservation, setting it apart from traditional methods that often degrade nutritional quality due to high heat and pressure. As Revo Foods’ CEO Robin Simsa puts it, “Our goal is not just to mimic the appearance of traditional foods but to preserve their nutritional integrity while using sustainable ingredients.”

Similarly, Israel-based Steakholder Foods has made headlines with its pioneering work on lab-grown fish fillets. Partnering with Singapore’s Unami Meats, Steakholder Foods created the world’s first ready-to-cook 3D-printed fish fillet using living grouper cells. This innovation was designed for rapid production, making the product ready within minutes of printing. By customizing bioink to mimic the texture and taste of traditional fish, Steakholder Foods has paved the way for lab-grown seafood to enter mainstream markets in regions like Singapore by the end of 2024.

SavorEat, another significant player, has introduced plant-based alternatives with their “robotic chef,” an advanced 3D printer capable of creating custom meats for specific dietary preferences. With features that enable adjustments in fat and protein content, SavorEat is leading the personalization of plant-based meat. This not only improves accessibility for people with dietary restrictions but also opens possibilities for flavour customization, a concept central to SavorEat’s partnership with Israel’s BBB burger chain.

Mass Customization in Food Production

One of the most transformative aspects of 3D food printing is its ability to support “mass customization.” This concept allows food products to be modified at scale, catering to individual dietary requirements, allergies, and even genetic markers. Revo Foods’ Taste Factory, for instance, uses its advanced technology to create customizable food products, enabling consumers to select ingredients and nutrient profiles that suit their health needs.

For individuals with specific health conditions, such as those requiring low-sodium or high-protein diets, the personalization aspect of 3D food printing can be a game-changer. Researchers have also highlighted its potential in medical and eldercare settings, where customized nutrition is essential. The University of the West of England’s research into 3D-printed foods for dysphagia patients, using pureed vegetables and natural thickeners, is a prime example of how this technology can address specialized dietary needs.

Furthermore, 3D printing technology is poised to address broader nutritional challenges. SavorEat’s focus on customization includes adjusting the fat and protein composition in its products, a feature particularly appealing to consumers looking for healthier food choices without compromising taste. This type of personalized nutrition has already garnered interest in the sports and fitness sectors, where nutrition plays a key role in performance.

Looking Forward

The developments in 3D food printing mark a pivotal shift toward sustainable, customized, and accessible food production. The industrial-scale innovations led by Revo Foods, Steakholder Foods, and SavorEat have laid the groundwork for the global expansion of 3D-printed foods, transforming them from niche products to viable options in mainstream markets. Personalized nutrition, once confined to the realm of specialized diets, is now within reach for broader audiences, thanks to the advancements in mass customization technologies.

With these recent strides in industrial scalability and personalization, 3D food printing is set to redefine the food landscape. As new technologies emerge and consumer demand for sustainable, ethical, and personalized options continues to grow, the future of 3D food printing promises not only innovation but also a profound impact on global food systems.
